Winemaking starts in the vineyard!

As vignerons with a strong hands-on approach, we embrace the ‘vine to wine’ tradition. Over many years of working in our vineyard, we have learnt where to find the best fruit for our reserve wines. With Paul’s focus on both, the viticultural aspects and winemaking, he understands the fruit characters to pick at optimum time with the goal to make the best wine from each variety.

Paul uses a minimalistic winemaking approach to capture and retain varietal purity and primary fruit flavours with the aim to create harmonious wines that tick all the right boxes. And it is his fine palate and vision for the wine’s development in the bottle that creates wines of distinction for Sedona Estate.
